Still for The Leftover Bananas

Healthy and hearty banana muffins that none can resist

Yes, because we love bananas! And there are presumably always some leftover ripe bananas lurking around the corner and waiting to be consumed. Remember the previous banana bread recipe? I am so happy that the ingredients for this bake are similar, but with less baking steps and even shorter time to bake. How convenient! Without further ado, let’s bake!

Fluffy Banana Muffin (Made with Less Sugar)

Wet Ingredients

  • 75 gr melted butter
  • 60ml joghurt
  • 2 eggs
  • 3 large mashed overripe bananas (you can mesh it with fork)
  • 1 tsp vanilla extract

Dry Ingredients

  • 180 gr all purpose flour 
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 tsp cinnamon
  • ½ tsp cardamom
  • 70gr sugar

Steps

  • Heat your oven in 190°C
  • Mix all your wet ingredients with sugar together
  • Mix your dry ingredients, shift everything, put these ingredients gradually to the wet ingredients’s bowl
  • Mix everything gently, in the terms of speed and power
  • Put the muffin paper cups in the bake form 
  • Fill your batter til ⅔ or ¾ cup full 
  • Bake them in your oven for 5 minutes in 190°C 
  • Lower the temperature to 175° and bake them for another 18-20 minutes more 
  • Do not open the oven because it will effect your dough for not rising up properly
  • Check your dough by inserting skewer into it, when it’s clean then it is ready
  • Take out your banana muffins and let it cool down before you enjoy it
